Basic Black Lentils

I love black lentils culinarily because they are dark and dense and are just perfect for those recipes that call for that dark intense color. They are unobtrusive in flavor while just imparting their creaminess, when pureed.

Instructions:

  • Bring the water to boil in a medium saucepan
  • Add the lentils and cook, uncovered, for 20 minutes, or until "al dente" but cooked through.
  • Place in a colander to drain and rinse under cold water and drain again.
